Ingredients

- 4 bell peppers
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix together quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
- Stuff the mixture into each bell pepper.
- If using, top with shredded cheese.
- Place the stuffed peppers in the air fryer basket and cook for 15-20 minutes, or until the peppers are tender.
- Remove from the air fryer and let cool slightly before serving.
Notes
- Feel free to customize the filling with your favorite ingredients.
- For a spicier kick, add jalapeños or hot sauce to the filling.
