Ingredients

  • 4 bell peppers
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix together quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  4. Stuff the mixture into each bell pepper.
  5. If using, top with shredded cheese.
  6. Place the stuffed peppers in the air fryer basket and cook for 15-20 minutes, or until the peppers are tender.
