- 1 package gnocchi (about 16 oz)
- 2 cups cherry tomatoes, halved
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 8 oz burrata cheese
- Fresh basil for garnish
Instructions
- In a large pot of boiling salted water, cook the gnocchi according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the garlic and sauté until fragrant.
- Add the cherry tomatoes and cook until they start to soften, about 5 minutes.
- Stir in the heavy cream and Italian seasoning, and season with salt and pepper.
- Bring the mixture to a simmer, then add the cooked gnocchi and stir to combine.
- Remove from heat and top with burrata cheese and fresh basil before serving.
Notes
- For a lighter version, substitute heavy cream with half-and-half.
- Feel free to add spinach or other vegetables for extra nutrition.
