Ingredients

- 4 medium zucchinis
- 1 cup fresh basil leaves
- 1/4 cup pine nuts
- 2 cloves garlic
- 1/4 cup nutritional yeast
- 1/2 cup olive oil
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
Instructions
- Spiralize the zucchinis to create noodles.
- In a food processor, combine basil, pine nuts, garlic, nutritional yeast, and olive oil. Blend until smooth to make the pesto.
- Toss the zucchini noodles with the pesto until well coated.
- Add the halved cherry tomatoes and mix gently.
- Season with salt and pepper to taste.
- Serve immediately and enjoy!
