- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- 1 cup onions, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides.
- Stir in the onions and garlic, cooking until softened.
- Add the tomato paste, thyme, rosemary, bay leaves, salt, and pepper.
- Pour in the beef broth and bring to a boil.
- Add the carrots and potatoes, then reduce heat to low.
- Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- Remove bay leaves before serving.
Notes
- For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
- Feel free to add other vegetables like peas or green beans.
- This stew can be made a day in advance for better flavor.
