Whole30 Chicken Zoodle Alfredo is a creamy and delicious dish that combines spiralized zucchini noodles with tender chicken in a rich, dairy-free Alfredo sauce.

- 2 medium zucchini, spiralized
- 1 lb chicken breast, diced
- 1 cup cauliflower florets
- 1/2 cup chicken broth
- 1/4 cup nutritional yeast
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced chicken and cook until browned and cooked through.
- In a separate pot, steam cauliflower florets until tender.
- In a blender, combine steamed cauliflower, chicken broth, nutritional yeast, garlic, salt, and pepper. Blend until smooth.
- Add spiralized zucchini to the skillet with chicken and sauté for 2-3 minutes.
- Pour the Alfredo sauce over the chicken and zoodles, stirring to combine.
- Cook for an additional 2-3 minutes until heated through.
- Serve hot, garnished with fresh parsley.
Notes
- For a spicier version, add red pepper flakes.
