Ingredients

  • 2 medium zucchini, spiralized
  • 1 lb chicken breast, diced
  • 1 cup cauliflower florets
  • 1/2 cup chicken broth
  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through.
  3. In a separate pot, steam cauliflower florets until tender.
  4. In a blender, combine steamed cauliflower, chicken broth, nutritional yeast, garlic, salt, and pepper. Blend until smooth.
