- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon turmeric (for color)
- 1/4 teaspoon salt
- 1/4 cup cornstarch
- 1/4 cup coconut milk
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, melted coconut oil, and maple syrup until combined.
- Press the mixture into the bottom of a lined baking dish to form the crust.
- Bake the crust for 10-12 minutes until lightly golden.
- In another bowl, whisk together lemon juice, lemon zest, turmeric, salt, cornstarch, and coconut milk until smooth.
- Pour the lemon mixture over the baked crust.
- Bake for an additional 20-25 minutes until set.
- Let cool completely before slicing into bars.
Notes
- Store in the refrigerator for up to a week.
- For a sweeter taste, adjust the maple syrup to your preference.
- Can be dusted with powdered sugar before serving for extra sweetness.
