Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup chickpeas, cooked
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 avocado, sliced
- 2 cups spinach
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 tablespoon maple syrup
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water, bring to a boil, then reduce heat and simmer for 15 minutes.
- In a bowl, whisk together tahini, lemon juice, maple syrup, salt, and pepper to make the dressing.
- Once quinoa is cooked, fluff with a fork and let it cool slightly.
- In a large bowl, combine quinoa, chickpeas, cherry tomatoes, cucumber, avocado, and spinach.
- Drizzle the tahini dressing over the bowl and toss gently to combine.
- Serve immediately and enjoy your healthy meal!
