Ingredients

  • 1 bell pepper, diced
  • 2 carrots, diced
  • 1 can diced tomatoes (14 oz)
  • 2 cups vegetable broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, garlic, bell pepper, and carrots. Sauté until softened.
  3. Stir in the cooked black beans and lentils.
  4. Add diced tomatoes, vegetable broth, chili powder, cumin, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
