Description

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, mix the vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Drop tablespoon-sized amounts of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until a toothpick inserted comes out clean. Let cool completely.
  7. For the filling, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  8. Spread a generous amount of filling on the flat side of one whoopie pie and top with another pie, flat side down. Repeat with remaining pies.
