Delicious and soft red velvet whoopie pies filled with cream cheese frosting, perfect for Valentine’s Day.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, mix the vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Drop tablespoon-sized amounts of batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until a toothpick inserted comes out clean. Let cool completely.
- For the filling, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
- Spread a generous amount of filling on the flat side of one whoopie pie and top with another pie, flat side down. Repeat with remaining pies.
