Ingredients

  • 14 oz firm tofu, cubed
  • 2 cups bell peppers, sliced (red, yellow, green)
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 medium carrot, julienned
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes.
  4. Add minced garlic and cook for an additional minute.
  5. Add the sliced bell peppers, broccoli, snap peas, and carrot to the skillet.
  6. Stir-fry the vegetables for about 5-7 minutes until they are tender-crisp.
  7. Pour in the soy sauce and sesame oil, stirring to combine.
  8. Season with salt and pepper to taste.
  9. Remove from heat and garnish with sesame seeds before serving.
