Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 6 to 8 tablespoons ice water
  • 4 cups apples, peeled, cored, and sliced
  • 1 cup brown sugar
  • 1/2 cup toffee bits
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in ice water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight.
  4. Roll out the dough on a floured surface and fit into a pie pan.
  5. In another bowl, combine sliced apples, brown sugar, toffee bits, cinnamon, lemon juice, and cornstarch.
  6. Pour the apple mixture into the pie crust.
  7. Cover with a top crust, seal edges, and cut slits for steam to escape.
  8. Bake for 15 minutes in the preheated oven, then reduce temperature to 350°F (175°C) and continue baking for 30-35 minutes.
  9. Let cool before serving.

Notes

  • For a richer flavor, add a pinch of nutmeg to the apple mixture.
