A delicious Sweet Potato Casserole topped with fluffy marshmallows and a crunchy brown sugar streusel, perfect for holiday gatherings.

- 4 cups mashed sweet potatoes
- 1 cup brown sugar
- 1/2 cup milk
- 1/2 cup butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups mini marshmallows
- 1 cup pecans, chopped
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar (for streusel)
- 1/4 cup butter (for streusel)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine mashed sweet potatoes, brown sugar, milk, melted butter, eggs, vanilla extract, and salt. Mix until smooth.
- Pour the sweet potato mixture into a greased baking dish.
- In a separate bowl, mix together the chopped pecans, flour, brown sugar, and butter to create the streusel topping.
- Sprinkle the streusel mixture evenly over the sweet potato layer.
- Bake in the preheated oven for 25 minutes.
- Remove from the oven and top with mini marshmallows.
- Return to the oven and bake for an additional 10-15 minutes, or until the marshmallows are golden brown.
- Let cool slightly before serving.
Notes
- For a vegan version, substitute eggs with flax eggs and use plant-based milk and butter.
- Can be prepared a day in advance and baked just before serving.
- Adjust the sweetness by adding more or less brown sugar according to taste.
