- 1 cup quinoa
- 2 cups vegetable broth
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a skillet, heat olive oil over medium heat.
- Add garlic and mushrooms, sauté until mushrooms are tender.
- Add quinoa and vegetable broth to the skillet.
- Bring to a boil, then reduce heat and cover, simmering for 15 minutes.
- Stir in fresh spinach and cook until wilted.
- Season with salt and pepper to taste.
