Ingredients

- 2 cups carrots, chopped
- 1 cup red lentils, rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 4 cups vegetable broth
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat sesame oil over medium heat.
- Add onion, garlic, and ginger; sauté until fragrant.
- Stir in chopped carrots and cook for a few minutes.
- Add red lentils, vegetable broth, soy sauce, and red pepper flakes.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.
- Blend the soup until smooth using an immersion blender or regular blender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
- Adjust the spice level by adding more or less red pepper flakes.
- This soup can be stored in the refrigerator for up to 5 days.
- For a creamier texture, add a splash of coconut milk before serving.
