Ingredients

  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the apple cider.
  5. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, salt, and ginger.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into the prepared loaf pan.
  8. In a small bowl, mix together the sugar and cinnamon for the topping, then sprinkle it over the batter.
  9. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
