A delicious and healthy Southwestern Chicken Salad made with Greek yogurt instead of mayo, packed with bold flavors.

- 2 cups cooked chicken, shredded
- 1 cup Greek yogurt
- 1 cup black beans, rinsed and drained
- 1 cup corn, canned or frozen
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, avocado, red onion, and cilantro.
- In a separate bowl, mix the Greek yogurt, lime juice, cumin, chili powder, salt, and pepper until well combined.
- Pour the yogurt dressing over the chicken mixture and toss until everything is evenly coated.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
