- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 package egg roll wrappers
- Oil for frying
Instructions
- In a large bowl, combine black beans, corn, bell peppers, green onions, cheese, cumin, chili powder, garlic powder, and onion powder.
- Lay an egg roll wrapper on a clean surface and place a spoonful of the filling in the center.
- Fold the sides of the wrapper over the filling and roll it up tightly.
- Heat oil in a deep pan over medium heat.
- Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
- Serve warm with your favorite dipping sauce.
