Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, sugar, and brown sugar until smooth.
- Add the pumpkin puree, egg, and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Let the cookies cool completely before icing.
- For the cream cheese icing, beat together 8 oz cream cheese, 1/4 cup butter, 2 cups powdered sugar, and 1 teaspoon vanilla extract until smooth.
- Spread the icing on cooled cookies and enjoy!
