- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Chill the dough in the refrigerator for about 30 minutes.
- Once chilled, scoop tablespoon-sized portions of dough and roll them into balls.
- Roll each ball in powdered sugar to coat and place them on the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are set and the tops are crinkled.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For an extra lemony flavor, add more lemon zest.
- Store cookies in an airtight container for up to a week.
- These cookies can be frozen for up to three months.
