Ingredients

  • 1 can kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, garlic, and bell pepper; sauté until softened.
  3. Stir in chili powder, smoked paprika, and cumin; cook for 1 minute.
  4. Add the diced tomatoes and vegetable broth; bring to a simmer.
  5. Add the three types of beans; stir well and let simmer for 20-30 minutes.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a spicier chili, add diced jalapeños or cayenne pepper.
