- 4 boneless, skinless chicken breasts
- 2 cups frozen street corn
- 1 cup cream cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place the chicken breasts in the slow cooker.
- Add the frozen street corn on top of the chicken.
- In a separate bowl, mix together the cream cheese, sour cream, mayonnaise, lime juice, chili powder, garlic powder, onion powder, salt, and pepper until smooth.
- Pour the creamy mixture over the chicken and corn in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix everything together.
- Serve hot, garnished with fresh cilantro.
Notes
- For a spicier version, add diced jalapeños to the slow cooker.
- This dish pairs well with rice or tortillas.
