- 4 chicken thighs
- 4 chicken drumsticks
- 1 cup red wine
- 1 cup chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat and brown the chicken pieces.
- Transfer the browned chicken to the slow cooker.
- Add the chopped onion, sliced carrots, minced garlic, and sliced mushrooms to the slow cooker.
- In a bowl, mix the red wine, chicken broth, tomato paste, thyme, bay leaf, salt, and pepper.
- Pour the mixture over the chicken and vegetables in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- Once cooked, remove the bay leaf and serve hot.

- Serve with crusty bread or over mashed potatoes for a complete meal.
