Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat and brown the chicken thighs on both sides.
  2. Transfer the browned chicken to the slow cooker.
  3. Add the chopped onion, garlic, carrots, potatoes, and peas to the slow cooker.
  4. Pour in the chicken broth and add thyme, salt, and pepper.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  7. Once cooked, shred the chicken in the stew and stir well before serving.

Notes

  • Feel free to add other vegetables like celery or bell peppers.
