Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 cups kale, chopped
  • 1/2 cup small pasta (like ditalini)
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat and add the chopped onion and garlic. Sauté until softened.
  2. Add the diced carrots and celery, cooking for another 5 minutes.
  3. Stir in the chicken thighs, diced tomatoes, chicken broth, oregano, basil, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Add the chopped kale and pasta, cooking until the pasta is tender.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For a spicier version, add red pepper flakes.
  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
