- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract

- 1/2 teaspoon salt
- Green food coloring
- 2 cups powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon peppermint extract
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix flour, baking soda, and baking powder.
- In another bowl, cream together the butter and sugar until smooth.
- Beat in the egg, vanilla extract, and almond extract.
- Gradually blend in the dry ingredients.
- Add green food coloring until desired color is achieved.
- Roll out the dough and cut into shamrock shapes.
- Place cookies on ungreased baking sheets.
- Bake for 8 to 10 minutes in the preheated oven.
- Let cool on wire racks.
- For the icing, mix powdered sugar, milk, and peppermint extract until smooth.
- Decorate cooled cookies with mint icing.
Notes
- Store cookies in an airtight container for up to a week.
- For a stronger mint flavor, increase the amount of peppermint extract in the icing.
