- 1 pound dried black-eyed peas
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 smoked ham hock
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 bay leaf
- 2 cups cooked rice
Instructions
- Rinse and sort the black-eyed peas, removing any debris.
- In the crock pot, combine the black-eyed peas, onion, garlic, green bell pepper, and ham hock.
- Add the chicken broth, salt, black pepper, cayenne pepper, and bay leaf.
- Cover and cook on low for 6-8 hours or until the peas are tender.
- Remove the ham hock, shred the meat, and return it to the pot.
- Serve over cooked rice.
Notes
- For a vegetarian version, omit the ham hock and use vegetable broth.
