Ingredients

- 2 cups sauerkraut
- 1 lb pork shoulder, cubed
- 1 lb kielbasa, sliced
- 1 cup beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp caraway seeds
- 1 bay leaf
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add cubed pork shoulder and cook until browned.
- Stir in sliced kielbasa and cook for an additional 5 minutes.
- Add sauerkraut, beef broth, caraway seeds, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1-2 hours.
- Remove bay leaf before serving.
Notes
- For a richer flavor, let the stew sit overnight in the refrigerator and reheat before serving.
- Serve with crusty bread for a complete meal.
