Description

Ingredients

  • 2 cups sauerkraut
  • 1 lb pork shoulder, cubed
  • 1 lb kielbasa, sliced
  • 1 cup beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp caraway seeds
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add cubed pork shoulder and cook until browned.
  4. Stir in sliced kielbasa and cook for an additional 5 minutes.
  5. Add sauerkraut, beef broth, caraway seeds, bay leaf, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 1-2 hours.
  7. Remove bay leaf before serving.

Notes

  • For a richer flavor, let the stew sit overnight in the refrigerator and reheat before serving.
