A delicious recipe for stuffed meatballs served in a rich Guinness gravy, perfect for a hearty meal.

- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- Salt and pepper to taste
- 1 cup mozzarella cheese (for stuffing)
- 2 cups beef broth
- 1 cup Guinness beer
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, salt, and pepper.
- Form the mixture into meatballs and stuff each with a piece of mozzarella cheese.
- Heat olive oil in a skillet over medium heat and brown the meatballs on all sides.
- Remove meatballs and set aside. In the same skillet, sauté onions and garlic until translucent.
- Add beef broth, Guinness beer, Worcestershire sauce, and thyme to the skillet, bringing it to a simmer.
- Return the meatballs to the skillet, cover, and let simmer for 30 minutes.
- Transfer the meatballs to a baking dish and pour the gravy over them.
- Bake in the oven for 15 minutes until heated through.
- Serve hot with your choice of sides.
Notes
- For a spicier version, add red pepper flakes to the meatball mixture.
- Serve with mashed potatoes or crusty bread to soak up the gravy.
- Leftovers can be stored in the refrigerator for up to 3 days.
