Instructions
- Rinse and soak the black-eyed peas overnight.
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion, garlic, and bell pepper; sauté until softened.
- Add the soaked black-eyed peas, diced tomatoes, vegetable broth, and Cajun seasoning.
- Bring to a boil, then reduce heat and simmer for about 45 minutes, or until peas are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with sliced green onions.
