- 2 cans of artichoke hearts, drained
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the drained artichoke hearts with olive oil, salt, black pepper, garlic powder, and paprika.
- Spread the artichoke hearts on a baking sheet in a single layer.
- Roast in the preheated oven for 20-25 minutes, until golden brown and crispy.
- While the artichokes are roasting, prepare the garlic aioli by mixing mayonnaise, minced garlic, and lemon juice in a small bowl.
- Once the artichokes are done, remove them from the oven and serve warm with the garlic aioli on the side.
Notes
- For extra flavor, add fresh herbs like parsley or thyme to the artichokes before roasting.
- Store any leftover aioli in the refrigerator for up to a week.
