- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1 can (20 oz) sliced pineapple, drained
- Maraschino cherries
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup milk
- 2 large eggs
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a round cake pan, melt the butter and sprinkle the brown sugar evenly over it.
- Arrange the pineapple slices and cherries on top of the brown sugar mixture.
- In a mixing bowl, combine flour, granulated sugar, baking powder, and salt.
- In another bowl, whisk together milk, eggs, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Pour the batter over the pineapple and cherries in the cake pan.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool for 10 minutes, then invert onto a serving plate.
Notes
- For a richer flavor, use brown sugar for the cake batter as well.
- Serve warm with whipped cream or vanilla ice cream.
- Store leftovers in an airtight container at room temperature for up to 3 days.
