Description

Raspberry Cheesecake Brownies are a delicious dessert that combines rich chocolate brownies with a creamy raspberry cheesecake layer, creating a perfect balance of flavors.

Ingredients

Scale
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a saucepan, melt the butter over low heat. Remove from heat and stir in granulated sugar, eggs, and vanilla.
  3. Mix in flour, cocoa powder, and salt until just combined.
  4. Pour half of the brownie batter into the prepared pan and spread evenly.
  5. In a separate bowl, beat the cream cheese and powdered sugar until smooth. Fold in the raspberries gently.
  6. Spread the cream cheese mixture over the brownie layer in the pan.
  7. Drop spoonfuls of the remaining brownie batter on top of the cheesecake layer and swirl with a knife.
  8. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool before cutting into squares and serving.

Notes

  • For a richer flavor, use dark chocolate cocoa powder.
  • Fresh raspberries can be substituted with frozen, but make sure to thaw and drain them first.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
