- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 2 cups cooked chicken, shredded
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in bell pepper and cook for another 2-3 minutes.
- Add black beans, corn, diced tomatoes, chicken, chili powder, cumin, salt, and pepper.
- Mix well and let it simmer for about 5-7 minutes.
- Sprinkle cheese on top and cover until melted.
- Garnish with fresh cilantro before serving.
Notes
- Feel free to add more vegetables like zucchini or spinach.
- This dish can be made vegetarian by omitting the chicken.
