- 1 lb chicken breast, cut into bite-sized pieces
- 1/2 cup pomegranate juice
- 2 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp fresh ginger, grated
- 2 cups cooked rice
- 1/4 cup pomegranate seeds
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- In a bowl, mix pomegranate juice, sesame oil, soy sauce, honey, and grated ginger.
- Marinate the chicken pieces in the mixture for at least 30 minutes.
- Heat a skillet over medium heat and add the marinated chicken, cooking until golden brown and cooked through.
- Prepare the ginger rice by adding grated ginger to the cooked rice and mixing well.
- Serve the chicken over the ginger rice, garnished with pomegranate seeds and sliced green onions.
Notes
- For a spicier kick, add red pepper flakes to the marinade.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- Feel free to substitute chicken with tofu for a vegetarian option.
