Ingredients

- 1 cup vegetable broth
- 1/2 cup fresh mint leaves

Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and sauté until translucent.
- Add peas and vegetable broth, bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Stir in fresh mint leaves and cook for an additional 2 minutes.
- Blend the soup until smooth and season with salt and pepper.
