Ingredients

  • 2 pounds of carrots
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the carrots into large chunks.
  3. Boil the carrots in salted water until tender, about 15-20 minutes.
  4. Drain the carrots and place them on a baking sheet.
  5. Smash the carrots gently with a fork or potato masher.
