Ingredients

  • 4 large sweet potatoes
  • 1/4 cup coconut milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped
  • 1/4 cup coconut flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Pierce the sweet potatoes with a fork and bake them for about 45 minutes or until tender.
  3. Once cooled, peel the sweet potatoes and mash them in a large bowl.
  4. Add coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes and mix well.
  5. In a separate bowl, combine chopped pecans and coconut flour.
  6. Spread the sweet potato mixture into a baking dish and top with the pecan mixture.
  7. Bake for an additional 25-30 minutes until the top is golden brown.
  8. Let it cool slightly before serving.
