Instructions
- In a large pot, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in the orzo and cook for 1-2 minutes.
- Add vegetable broth, cherry tomatoes, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 10-12 minutes, stirring occasionally.
- Once the orzo is cooked, stir in the fresh spinach until wilted.
- Serve warm, topped with Parmesan cheese if desired.
