Ingredients

  • 1 lb chicken breast, diced
  • 2 cups pasta (penne or rotini)
  • 1 can (15 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon chipotle in adobo sauce
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add diced chicken and cook until browned.
  4. Stir in the chipotle in adobo sauce, diced tomatoes, chicken broth, and pasta.
  5. Bring to a boil, then reduce heat and simmer until pasta is cooked and liquid is absorbed.
