- 1 lb chicken breast, diced
- 2 cups pasta (penne or rotini)
- 1 can (15 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon chipotle in adobo sauce
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add diced chicken and cook until browned.
- Stir in the chipotle in adobo sauce, diced tomatoes, chicken broth, and pasta.
- Bring to a boil, then reduce heat and simmer until pasta is cooked and liquid is absorbed.
- Stir in shredded cheese until melted and creamy.
- Season with salt and pepper to taste.
