Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup potatoes, diced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup spinach
- 1 cup coconut milk
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until softened.
- Stir in garlic and cook for another minute.
- Add vegetable broth, potatoes, broccoli, and cauliflower; bring to a boil.
- Reduce heat and simmer until vegetables are tender.
- Stir in spinach and coconut milk; cook until heated through.
- Season with salt and pepper to taste.
