- 1 cup cherry tomatoes, halved
- 2 cups spinach
- 1 cup heavy cream
- 1 cup vegetable broth
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, combine the pasta, cherry tomatoes, spinach, heavy cream, vegetable broth, garlic, and Italian seasoning.
- Bring the mixture to a boil over medium heat, stirring occasionally.
- Reduce the heat and let it simmer until the pasta is cooked and the sauce has thickened, about 10-12 minutes.
- Stir in the Parmesan cheese and season with salt and pepper to taste.
