Description

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove the beef and set aside. In the same pot, add onions and garlic, sauté until translucent.
  4. Stir in the tomato paste, thyme, and rosemary, cooking for another minute.
  5. Add the beef back to the pot along with the carrots, potatoes, and beef broth.
  6. Bring to a boil, then reduce heat to low and cover.
  7. Let it simmer for 2-3 hours until the beef is tender.
  8. Season with salt and pepper before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • Feel free to add other vegetables like peas or green beans.
  • This stew can be made a day ahead and tastes even better the next day.
