Ingredients

  • 1 can (400ml) coconut milk
  • 1/2 cup sugar
  • 1/4 cup water
  • 2 tablespoons gelatin powder
  • 1 cup fresh raspberries
  • 1 tablespoon lemon juice

Instructions

  1. In a saucepan, combine coconut milk and sugar over medium heat until sugar dissolves.
  2. In a small bowl, mix gelatin powder with water and let it bloom for 5 minutes.
  3. Add the bloomed gelatin to the coconut milk mixture and stir until fully dissolved.
  4. Pour the mixture into a mold and refrigerate for about 2 hours until set.
  5. In a blender, puree raspberries with lemon juice until smooth.
  6. Once the coconut jelly is set, swirl the raspberry puree on top and refrigerate for another hour.
  7. Cut into bars and serve chilled.
