- 1 can (400ml) coconut milk
- 1/2 cup sugar
- 1/4 cup water
- 2 tablespoons gelatin powder
- 1 cup fresh raspberries
- 1 tablespoon lemon juice
Instructions
- In a saucepan, combine coconut milk and sugar over medium heat until sugar dissolves.
- In a small bowl, mix gelatin powder with water and let it bloom for 5 minutes.
- Add the bloomed gelatin to the coconut milk mixture and stir until fully dissolved.
- Pour the mixture into a mold and refrigerate for about 2 hours until set.
- In a blender, puree raspberries with lemon juice until smooth.
- Once the coconut jelly is set, swirl the raspberry puree on top and refrigerate for another hour.
- Cut into bars and serve chilled.
Notes
- For a sweeter jelly, adjust the sugar to taste.
- Make sure to use unsweetened coconut milk for best results.
- Garnish with fresh raspberries before serving for added flavor and presentation.
