A delicious and hearty pork roast paired with tangy sauerkraut, perfect for a comforting meal.
Ingredients

- 3–4 lbs pork roast
- 2 cups sauerkraut
- 1 onion, sliced
- 2 apples, sliced
- 1 cup chicken broth
- 1 tablespoon caraway seeds
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Season the pork roast with salt and pepper.
- In a large roasting pan, place the sliced onion and apples at the bottom.
- Put the pork roast on top of the onions and apples.
- Spread the sauerkraut over the pork roast.
- Pour the chicken broth into the pan and sprinkle caraway seeds on top.
- Cover the pan with foil and roast in the oven for about 2-3 hours, or until the pork is tender.
- Remove the foil for the last 30 minutes to allow the roast to brown.
- Let the roast rest for 10 minutes before slicing and serving.
Notes
- For extra flavor, marinate the pork roast overnight.
- Serve with mashed potatoes or crusty bread.
- Leftovers can be stored in the refrigerator for up to 3 days.
