Ingredients

  • 34 lbs pork roast
  • 2 cups sauerkraut
  • 1 onion, sliced
  • 2 apples, sliced
  • 1 cup chicken broth
  • 1 tablespoon caraway seeds
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the pork roast with salt and pepper.
  3. In a large roasting pan, place the sliced onion and apples at the bottom.
  4. Put the pork roast on top of the onions and apples.
  5. Spread the sauerkraut over the pork roast.
  6. Pour the chicken broth into the pan and sprinkle caraway seeds on top.
  7. Cover the pan with foil and roast in the oven for about 2-3 hours, or until the pork is tender.
  8. Remove the foil for the last 30 minutes to allow the roast to brown.
  9. Let the roast rest for 10 minutes before slicing and serving.
