- 1 package of Mint Oreo cookies (about 14.3 oz)
- 8 oz cream cheese, softened
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional)
Instructions
- Crush the Mint Oreo cookies in a food processor until fine crumbs form.
- In a mixing bowl, combine the crushed cookies with softened cream cheese and mix until well blended.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Chill the truffles in the refrigerator for about 30 minutes.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second intervals, stirring until smooth.
- Dip each truffle into the melted chocolate, allowing excess to drip off, and place back on the parchment paper.
- Let the chocolate set at room temperature or refrigerate until firm.
Notes
- For a stronger mint flavor, add a few drops of mint extract to the cream cheese mixture.
- These truffles can be stored in an airtight container in the refrigerator for up to a week.
