Ingredients

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix together the pumpkin puree, sugar, salt, cinnamon, ginger, and nutmeg.
  3. Add the eggs and evaporated milk to the mixture and whisk until smooth.
  4. Place the mini pie crusts on a baking sheet.
  5. Pour the pumpkin filling into each mini pie crust, filling them about 3/4 full.
  6. Bake in the preheated oven for 15-20 minutes or until the filling is set.
  7. Remove from the oven and let cool before serving.
