- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 1 can (14 oz) sweetened condensed milk
- 1 cup brown sugar
- 1/2 cup light corn syrup
- 1 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the flour and cornstarch, mixing until a dough forms.
- Press the dough into the bottom of a greased 9×9 inch baking pan.
- Bake for 20 minutes or until lightly golden.
- In a saucepan, combine the sweetened condensed milk, brown sugar, and corn syrup. Cook over medium heat, stirring constantly until it thickens and turns a caramel color.
- Pour the caramel over the baked shortbread layer and let it cool.
- Melt the chocolate chips with the heavy cream in a microwave or double boiler, stirring until smooth.
- Spread the chocolate over the cooled caramel layer.
- Chill in the refrigerator until set, then cut into squares and serve.
Notes
- For a richer flavor, use dark chocolate instead of semi-sweet.
- Store in an airtight container in the refrigerator for up to a week.
- Allow the shortbread to come to room temperature before serving for the best texture.
