Description

Millionaire’s Shortbread is a rich and indulgent dessert featuring layers of buttery shortbread, creamy caramel, and smooth chocolate, making it a beloved Irish treat.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup brown sugar
  • 1/2 cup light corn syrup
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the flour and cornstarch, mixing until a dough forms.
  4. Press the dough into the bottom of a greased 9×9 inch baking pan.
  5. Bake for 20 minutes or until lightly golden.
  6. In a saucepan, combine the sweetened condensed milk, brown sugar, and corn syrup. Cook over medium heat, stirring constantly until it thickens and turns a caramel color.
  7. Pour the caramel over the baked shortbread layer and let it cool.
  8. Melt the chocolate chips with the heavy cream in a microwave or double boiler, stirring until smooth.
  9. Spread the chocolate over the cooled caramel layer.
  10. Chill in the refrigerator until set, then cut into squares and serve.

Notes

  • For a richer flavor, use dark chocolate instead of semi-sweet.
  • Store in an airtight container in the refrigerator for up to a week.
  • Allow the shortbread to come to room temperature before serving for the best texture.
