Instructions
- In a large skillet, heat the corn over medium heat until it starts to char slightly.
- In a bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, and salt.
- Add the charred corn to the bowl and mix until well combined.
- Stir in the crumbled cotija cheese.
- Serve warm, garnished with fresh cilantro and additional cheese if desired.
