Ingredients

- 4 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced
- 1 red bell pepper, chopped
- 1 yellow onion, sliced
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup feta cheese, crumbled
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the chicken breasts, zucchini, bell pepper, onion, garlic, cherry tomatoes, oregano, basil, salt, pepper, and olive oil.
- Toss everything together until the chicken and vegetables are well coated.
- Transfer the mixture to a baking dish and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven and sprinkle with feta cheese before serving.
Notes
- For added flavor, marinate the chicken in olive oil and herbs for a few hours before baking.
- This dish can be served with a side of quinoa or brown rice for a complete meal.
