Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced

  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Remove the core from the cabbage and carefully separate the leaves.
  2. In a skillet, heat olive oil over medium heat and add minced garlic.
  3. Add the chickpeas, lemon juice, lemon zest, oregano, paprika, salt, and pepper to the skillet.
  4. Cook for about 5-7 minutes, stirring occasionally, until the chickpeas are heated through.
  5. To assemble, place a spoonful of the chickpea mixture onto a cabbage leaf and wrap it up.
  6. Garnish with fresh parsley and serve immediately.
