- 1 head of cabbage
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Remove the core from the cabbage and carefully separate the leaves.
- In a skillet, heat olive oil over medium heat and add minced garlic.
- Add the chickpeas, lemon juice, lemon zest, oregano, paprika, salt, and pepper to the skillet.
- Cook for about 5-7 minutes, stirring occasionally, until the chickpeas are heated through.
- To assemble, place a spoonful of the chickpea mixture onto a cabbage leaf and wrap it up.
- Garnish with fresh parsley and serve immediately.
Notes
- For a spicier kick, add red pepper flakes to the chickpea mixture.
- These wraps can be made ahead of time and stored in the refrigerator.
- Feel free to add other vegetables like bell peppers or cucumbers for extra crunch.
